Semi-dried tomatoes

DESCRIPTION

We grow our own red tomatoes in the north-west of Tunisia.  The harvest is at optimal ripeness and the crop is simply washed, cut in julienne shape, then dried in a tunnel dryer.   Dehydration is kept short to retain an optimum red color and fresh-like flavor.  Because our drying process is quick, we don’t need to add salt as is done for sun-dried tomatoes.

We then create two different products: one is oregano-flavored and lightly salted, whereas the other remains unseasoned and salt-free.

Salt-free semi-dried tomatoes

Our salt-free semi-dried tomatoes are very popular with chefs for their recipes. They are also ideal for salt-free diets.

Seasoned semi-dried tomatoes

After dehydration, the semi-dried tomatoes are seasoned according to our own recipe.  They may optionally be seasoned accodring to a customer-provided recipe.  Our seasoned semi-dried tomatoes are enjoyable as antipasti  for example, or as addition to salads and pasta.
